So it's that time of year again! Lol! Anyone that knows anyone with zucchini plants are now being given all their extra zucchini. We didn't get our seeds planted early enough this year, so I thought we were going to miss out, but a friend of a friend, has been giving us BAGS of them (so many I brought some to my parents' house). Here's one of our favourite ways to use zucchini which dates back to my grandparents baking us zucchini bread when I was a kid. My mom told me last weekend that that was the only thing she knew how to make with zucchini...
BUT, I also just filmed a few savoury recipes for YouTube as well so stay tuned for those too. I'm not a huge fan of zucchini (I hate how it goes mushy so I NEVER buy it at the store), but the breaded zucchini chips were SOOOOOO addictive, and the fritters... I ended up eating the entire batch for my lunch that day, lol. So be forwarned!! You'll be wanting everyone to give you zucchini after this.
AND if you use sugar-free choc chips and a sugar-free granulated sweetener like allulose, this becomes low-carb/keto too!!

INGREDIENTS
1 large or 2 smaller zucchinis (after shredding you want about 2 cups of zucchini)
3 eggs
1/4 cup oil (we used melted coconut oil, but you could use avocado oil instead)
1 2/3 cups almond flour
1/4 cup coconut sugar/granulated sweetener of choice (we did half coconut, half allulose in the video). ALSO, we made this less sweet, more dark choc vibes, so if you like things sweeter, feel free to increase your sweetener to 2/3c like the OG recipe, that still works too
6 tbsp cocao powder
1 tsp vanilla
1 tsp baking soda
1/2 tsp salt
1/2 cup chocolate chips (we used Healthy Crunch 70% coconut-sugar sweetened choc chips)
Start by preheating your oven to 350F
Line a loaf pan with parchment (if you don't have a loaf pan you can totally use an 8x8 square pan too - just keep an eye on your baking time as it will be much thinner and therefore bake much faster)
Grate your zucchini (we like to put it through our food processor but you can totally use a box grater too!), then place the grated zucchini on paper towels or a kitchen towel to absorb the extra moisture from the zucchini.
Combine the rest of your ingredients in a large mixing bowl, then add the zucchini. Don’t worry if it seems dry at first. It will pick up moisture from the zucchini and loosen up as you mix.
Pour into your baking pan, (add some extra choc chips on top if you like) and bake for 45-55 minutes for a loaf pan. Check with a toothpick/skewer/butterknife, and if it comes out clean, it's done. Pull the pan from your oven and let cool for 10-15 minutes. If the toothpick comes out with wet batter on it, add another 5 minutes of baking time - just keep an eye on it and the toothpick test will let you know when it's finished. For a 8x8 square pan, start with 25 minutes, and then add time as required.
Enjoy! We like to eat it while still warm, with a scoop of ice cream on top, so it melts into the bread. Yum!
Store your leftovers (if you have any), in an airtight container in the fridge. It will be good for up to 5 days.
