I had some frozen grated sweet potato in my freezer that I wanted to use up, so I put these fritters together, and they were so good! BONUS: I froze the leftovers, and they reheat amazingly in the airfryer too!!
Here's how to make them:
Ingredients:
about 4 cups grated sweet potato (I used our food processor attachment)
1/4c almond flour
1/4c cassava flour (or you can sub tapioca or another "starchy" flour here. I just like that cassava is a resistant starch)
2 eggs (or I've done this with 2tbsp ground flax as a binder too, you just may need to add some water after combined to get it to stick together nicely)
1 tsp sea salt
1/2 tsp paprika (or swap our fav potato spice!)
oil for shallow pan frying (I used coconut)
optional: spicy mayo for serving (combine your fav mayo & hot sauce to taste - it pairs nicely with the sweetness of the sweet potato)
Steps:
Combine grated sweet potato, flours, eggs & seasoning in a medium-large mixing bowl.
Divide into patties and place on lined baking tray or plate (I used a 1/4c measuring cup to make 7 patties, which I pressed down to about 1/2" thick - then I put them in the fridge for about an hour while we went to play tennis, before frying them).
Fry in batches in a wide frying pan, on medium heat. Flip after about 5 minutes (you're looking for golden brown crispiness!) and fry for another 2-3 minutes, until the second side is golden. Add oil between batches if needed.
Enjoy warm with your fav dipping sauce!
NOTE: If you have any leftovers, we frozen them on a sheet tray, then put them in a freezer ziplock. And reheated them in our airfryer at 390F for about 12 minutes for super easy crispy deliciousness. :)
