The long/proper way is definitely amazing, but I'm all for making things easier & more accessible. No molds! No chopping or toasting. No phyllo or gluten! Only 3-Ingredients, and super easy & delicious.

-Pulse equal parts pistachio butter & rice crispies* in a food processor (or simply mix in a bowl - I just had the food processor out & already dirty from making the pistachio butter).
-Fill muffin liners with 1tbsp melted choc, add a scoop of filling, and top with 1 more tbsp of melted chocolate
-Then chill until set & enjoy your new adult/levelled up Reese's peanut butter cups!
*you can also use puffed quinoa but it doesn't give the same crunch factor.
