Oven Baked Breaded Zucchini Chips

Here’s the last video of our zucchini series so far!! Hopefully these help you find new & delicious ways to use up all your zucchini. This last one is a super quick and easy oven-baked breaded zucchini chip recipe, that is so addictively crunchy on the outside, and soft & creamy on the inside (and this is coming from someone who wasn’t a big fan of zucchini - maybe I just never had it prepared this way!!?!)


INGREDIENTS:

1 medium zucchini

1/4c plant milk (we used almond milk) OR 1 egg, beaten*

1/2c gluten free bread crumbs (we made our own crumbs from gf sourdough)

1/2c almond flour

1/4 tsp garlic powder

1/4 tsp onion powder

1/4 tsp salt

Cooking spray


STEPS:

-Preheat oven to 325F

-Slice the zucchini into 1/4” coins

-Set up your breading station by adding the milk or 1 egg to a small bowl.

-To another bowl add the bread crumbs, almond flour, garlic powder, onion powder, and salt, then stir to combine. (Optional: if you eat dairy, 1/4c of parmesan cheese would be lovely here too!)

-Get your baking sheet ready beside your breading station and line it with parchment paper.

-Spray the parchment lightly with cooking spray

-Dip each zucchini slice into the milk or egg then into the bread crumbs, then place on the baking sheet, and repeat until all zucchini pieces are coated.

-Bake for 20 minutes, flip zucchini pieces, then bake for another 20 minutes (or until they’re golden brown and crispy).

-Remove from oven, and let cool for 5-10 minutes, then enjoy!!


NOTE: *Swap almond milk for eggs if you can eat them, and it will make for better binding of breading. Ours did stick, but the leftovers crumbled apart a bit.



They are addictive plain, but they would also go great with a garlic mayo or yogurt sauce, or your favourite marinara.


For a garlic mayo/yogurt sauce, simply mix 1/2 cup of mayo or yogurt with 1/4 tsp garlic powder (or fresh minced if you have some!), 1/4 tsp onion powder, 1/4 tsp salt, and stir to combine, then enjoy!! Chives or green onions would be a lovely addition too!
