No Churn Vegan Mint Ice Cream šŸ’ššŸØ Dairy-Free | No Machine Required

Last Monday the Shamrock Shake and mint Oreo McFlurry came back!!Ā  AND tomorrow is National Mint Chocolate Day, as if you needed any more excuses to treat yourself to a vanilla-mint milkshake, or a mint oreo ice cream treat?!?


If you havenā€™t heard of them, theyā€™re seasonal mint-flavoured McDonalds treats for St. Pattyā€™s Day. So nostalgic!! We always looked forward to shamrock shake season as kids. šŸ«¶šŸ’ššŸ„¤ā˜˜ļø But I canā€™t do all that dairy anymore, or all that sugar (not to mention what other ingredients are in it) so instead, weā€™re guna make a homemade, healthier, dairy-free/vegan version. šŸ˜‰šŸ™ŒšŸ»


Weā€™re guna start by making a no churn vegan mint ice cream, then we use it to make a vegan Shamrock Shake, and also a vegan Mint Oreo Blizzard/McFlurry.

INGREDIENTS:

ā–ŗ 2 cans full fat coconut milk, chilled overnight, just solid portion

ā–ŗ 1 cup sweetened condensed milk (we used canned coconut milk condensed milk that was sweetened with cane sugar, but you can also easily make your own using your sugar/sugar-sub of your choice, recipe link below ā¬‡ļø)

ā–ŗ 1 tbsp vanilla extract

ā–ŗ 1 tbsp mint extract (adjust to taste, & add more if you want)

ā–ŗ green food colour: 1 tsp blue spirulina powder & 2 tsp ground turmeric

ā–ŗ 1/2 tsp salt (helps balance flavour but also freezing texture)


STEPS:

1ļøāƒ£ Scoop off solid portion of coconut milk cans. Combine with rest of base ingredients in bowl & whip until smooth and fluffy.

2ļøāƒ£ Pour into loaf pan, cover & freeze 6-7 hours or overnight. šŸŒ™

3ļøāƒ£ Remove from freezer about 20 minutes before serving to let it thaw a bit before scooping.

Enjoy as is. Top with gluten-free oreo crumbs. Or proceed with šŸ’šā˜˜ļøšŸ„¤ Shamrock Shake instructions or šŸ’ššŸØšŸŖ Mint Oreo Blizzard/McFlurry instructions in the next video.

SHAMROCK SHAKE šŸ’šā˜˜ļøšŸ„¤

ā–ŗ 2 big scoops (1.5c) mint ice cream*

ā–ŗ 1/4-1/3 cup milk of choice (depends on preferred thickness)

1ļøāƒ£ Blender until smooth, transfer to cup

2ļøāƒ£ Optional: whipped cream/choc chips/crushed Oreos**

3ļøāƒ£ Enioy!!


MINT OREO BLIZZARD/MCFLURRY šŸ’ššŸØšŸŖ

ā–ŗ 2 big scoops (1.5c) mint ice cream

ā–ŗ 6-8 gluten-free Oreo/sandwich cookies**

1ļøāƒ£ Chop or crush sandwich cookies

2ļøāƒ£ Stir cookie crumbs into ice cream and transfer to a dish/cup/bowl

3ļøāƒ£ Optional: top with more cookie crumbs

4ļøāƒ£ Enioy!!

I loved the soft-serve-y creaminess, combined with the flavour & crunch of the oreo cookies SOOOO much that I mixed all our leftover ice cream & cookies into McFlurry style to enjoy. :)
