No Bake Choc Chip Oatmeal Energy Bites

These yummy little no-bake energy balls taste like chocolate chip cookie dough, and come together in one bowl, in just a few minutes. You can keep a batch in your fridge to snack on throughout the week, or throw some in your bag when you’re on the go, or add to your kids’ lunches (you can use sunbutter so they're nut-free!).

INGREDIENTS

-1 1/4 cups rolled oats

-1 cup unsweetened dried coconut

-1/4 chia or flax (we used 2 tbsp each)

-1/2 teaspoon sea salt

-1/2 cup creamy nut butter of choice (only nuts)

-6 tbsp honey/syrup, plus more as needed**

-1 teaspoon vanilla

-1/2 cup chocolate chips


INSTRUCTIONS:

-Combine everything and mix until it sticks together when squeezed in your hand. Add more honey/syrup as required.


**The amount will vary depending on your nut butter, and chia/flax, and mix-ins. When mixing your dough together it should form nice dough balls when you squeeze it. If it’s too dry and not sticking together well, add more of your sweetener 1 tbsp at a time until it is easily shaped.


-Then roll into small balls, pop into the fridge or freezer until set, then you can store these in the fridge in an air tight container for an easy snack.
