Then try this overnight chia pudding that tastes like dessert! It’s quick to assemble, and makes it easy to grab n go in the morning.
I’m making this, planning ahead for an early start last Friday morning. I knew I had a long day ahead, with 12+ hours in my van (turned out to be 16!!), picking up restocks 4+ hours away, from 5 different gluten-free bakeries, and a gf sandwich shop in the Toronto area.

INGREDIENTS
► 1 cup coffee/espresso, cold OR 1 cup water + 1-2tsp instant coffee/espresso powder
► 4 tbsp chia seeds
► 1-2 tbsp maple syrup/sf syrup
► 1/2 cup yogurt of choice
► cocao powder, for dusting
STEPS:
1️⃣ Combine coffee (or water + instant coffee), chia & sweetener, then stir. Cover and chill until thickened (4’ish hours)
2️⃣ Transfer half of this mixture into a glass/jar
3️⃣ Top with 4 tbsp yogurt of choice
4️⃣ Add remaining half of coffee/chia mixture & top with 4 more tbsp yogurt of choice
5️⃣ Sprinkle/dust with cocao powder, then dig in & enjoy!!
