We finally got winter/snowy weather here, so it’s time to bust out the hot cocao!!! Here’s my go to “healthier” recipe, along with a super fun vegan marshmallow fluff topping that you can make to top your hot chocolate, and feel like that famous/viral NYC shop Glace.

🤍 Vegan Marshmallow Fluff/Meringue
1/4c aquafaba
1/4-1/2c allulose/sweetener/sugar of choice (I did 1/4c here)
1/2 tsp cream of tartar
1/2 tsp vanilla
Combine aquafaba, sweetener & cream of tartar in a heat proof bowl over a bain-marie.
Heat to 160F and sweetener has dissolved, stirring occasionally
Remove from heat and add vanilla
Whip until smooth and fluffy (it can take 10+ minutes)
🍫 Hot Chocolate:
1-1.5 cups water (or use milk of choice & no milk powder)
2.5 tbsp cocao powder
1-2.5 tbsp powdered sugar substitute/allulose/cane sugar/coconut sugar, to taste (I added 2.5 tbsp here)
1/2 tbsp coconut milk powder (if you don’t have this, just use your fav milk instead of water - this adds creaminess without using liquid milk, but can be hard to find)
1/2 tsp vanilla
pinch of salt
Combine in sauce pot until starts to simmer, then pour into your fav mug
Transfer fluff to a ziptop bag, snip off a corner of the bag about 1/2in, and pipe onto your hot chocolate
Optional: Use a kitchen torch to toast your meringue fluff (you don’t have to, it’s delicious untested too!!)
Enjoy!!
Store any leftover fluff in an airtight container in the fridge, though it is the fluffiest the first day.
