Today is National French Toast Day!! Growing up french toast was one of my fav meals, and I would make it for dinner sometimes too. Use our new fluffy sandwich bread for a great gf version. Make it super fun by adding lots of toppings for everyone to mix & match and make it their own.
Ingredients
4 slices of fluffy sandwich bread, defrosted and lightly toasted or left out to get stale so it holds up to the egg/milk mixture.
2 eggs
splash of milk of your choice (we use organic goat milk in our home, and use coconut or almond milk at the bakery)
splash of vanilla
pinch of salt
toppings!! maple syrup/honey, coconut cream, crunchy bits (nuts, seeds, coconut, chocolate chips), fruit (bananas, berries).
Directions:
Whisk eggs, milks, vanilla, and salt.
Soak bread in egg mixture for a few minutes. Turn slices occasionally to evenly coat/soak the bread.
Preheat skillet/frying pan/flat top. Add some oil if not non-stick.
Cook soaked bread in pan and cook about 3 minutes per side until golden brown and cooked through.
Transfer to cooling rack/plates, and top with fun sauces, toppings, and/or fruit and ENJOY!
Store leftovers sealed in the fridge for a few days. I like to reheat them in the toaster for an easy next-day breakfast.
