Gluten Free Oreo Blondies | One Bowl, No Mixer!

Are you gluten-free and drool at all the fun, trending oreo desserts you see on instagram or TikTok or YouTube, and think it’s not fair? Well, now that Nabisco has come out with real gluten-free oreos that taste JUST LIKE their non-gf counterparts, we can make those kind of desserts too!!!


So let’s make some gluten-free oreo-packed blondies!! Chewy, salty, sweet, & addictive…



You CAN also make these low carb, by tweaking the recipe per the note below. :)


INGREDIENTS:


Blondies:

-1/2c coconut oil, melted

-2 1/4c almond flour

-1 cup granulated sweetener of choice* (I did 1/2c coconut sugar, 1/2cup allulose)

-2 eggs

-1 tbsp vanilla

-1/4 tsp baking soda

-1/4 tsp sea salt


Mix-Ins:

-75g dairy-free white chocolate, chopped*

-15 crushed/finer chopped gf oreos for mixing in*


Topping:

-8 halved/quartered/broken gf oreos for topping*


LOW CARB:

*to make this low carb: use sugar substitute, sugar-free white chocolate such as Lily’s, and low carb sandwich cookies such as Catalina Crunch (though these are NOT dairy-free).


INSTRUCTIONS:

-Combine blondie ingredients in a medium bowl and mix until combined.

-Add mix-ins, and fold in until combined

-Transfer to parchment lined 8x8 pan

-Press remaining oreo pieces (the bigger ones you saved) into top

-Bake at 375F for 23-25 minutes

-Let cool for 20 minutes

-Remove blondies from pan, cut into 16 squares & enjoy!!
