These have been my family's go to pancake recipe for over a year. My brother and his girls love it too! It's simple, and easy. It's gluten-free, grain-free and vegan.

You will need:
2 cup almond flour
1/4 cup tapioca flour
1 tbsp baking powder (if you're sensitive to corn, make your own at home with 1 tsp baking soda, and 2 tsp of cream of tartar)
1 tbsp coconut sugar
1 cup milk of your choice. (I will use almond milk, or even water. My brother's family uses lactose free milk).
1 tsp vanilla
pinch of salt
coconut oil, for cooking
Directions:
Combine all ingredients in a mixing bowl and let sit for 10 minutes to thicken.
Preheat a large frying pan and brush with coconut oil
Cook spoonfuls to make dollar pancakes (my kids' fav!) or 1/4 cup for larger pancakes.
When you start to see bubbles forming, carefully flip and cook the other side for a few more minutes.
Top with your favourite topping. I love coconut whipped cream, chopped nuts, and a fruit sauce or fresh berries. (See our other posts for recipes for a delicious homemade fruit sauce and coconut whipped cream).
