Where you can get GF croissants in our area:
Choko Mocko, Ajax, Ontario, Canada https://choko-mocko.com (just outside Toronto) - these are hemp protein & coconut; they’re gluten-free, dairy-free, vegan, soy-free, paleo, and even keto. This place is by far my fav based on clean the ingredients they use.
Le Marquis, Montreal, Quebec; https://boulangerielemarquis.com - these are made with rice flour; they’re gluten-free and dairy-free, but do have eggs, soy, & canola. BONUS they ship to Ontario - check with them for other regions.
L’Artisan Sans Gluten, Montreal, Quebec; https://lartisandelices.com They’re gluten-free and dairy-free as well (but I don’t have a full ingredient listing for them, and don’t know if they ship, but you can find them at a few bakeries in the Toronto area - let me know if you’d like a list).
CHOCOLATE CHIP KOOKIE DOUGH:
Combine all in a bowl, adding the chocolate chips last.
To bake these off as cookies, portion out into balls onto a parchment lined baking tray. Press the cookie down (it doesn’t spread much by itself), then bake at 350F for 8minutes (or until it starts to brown).
THE CROOKIE:
Slice your croissant in half. Stuff with cookie dough. Place croissant top bag on, and top with cookie dough (just like an almond croissant but with cookie dough!). Then bake at 350F for 8minutes (or until it starts to brown).
