Vanilla ice cream coated in a layer of crushed cereal, and fried until crunchy on outside. The ice cream becomes slightly melty under the coating, yet frozen in the middle. The BEST combination of hot & cold, creamy & crunchy!!
Top with your choice of whip cream and/or chocolate sauce & enjoy!!

YOU’LL NEED:
-ice cream of choice (we used dairy-free/vegan So Delicious Vanilla)
-cereal(s) of choice (we used apple juice sweetened organic corn-flakes-style cereal, an organic cinnamon-toast-crunch-type cereal, and an organic chocolate corn-pops-type cereal but you can use whatever cereal you have on hand!)
-aquabafa from a can of chickpeas (we saved ours from our chickpea brownie hack video) or you can sub a couple of egg whites if you eat eggs
-oil for frying, about 1-2 inches deep
-toppings: whip cream of choice, chocolate or caramel sauce, nuts/sprinkles, cherries, etc.
HOW TO:
-Crush your cereal of choice in a ziplock bag with a rolling, or pulse in a food processor until crumb-sized pieces. Then pour into a bowl.
-Prep a second bowl with your choice of aquafaba or egg whites
-Scoop your ice cream into balls, and coat in your cereal crumbs
-Then dip each coated ice cream ball into the aquafaba/egg white bowl, then back into the cereal crumbs for a second coat. You want to make sure you’ve completely covered/sealed in the ice cream so it doesn’t leak when you fry it.
-Pop your coated ice cream balls into your freezer for at least 3 hours or overnight. We want these frozen really solid.
-When your ice cream is frozen solid, set-up your frying station with a medium sauce pot, filled with 1-2 inches of oil, and heat to about 365F
-Using a spoon/tongs/spider carefully lower the coated ice cream ball(s) into the oil, and fry for 10-30 seconds (or until the cereal coating is golden brown.
-Carefully remove the fried cream and transfer to cooling rack or papertowel lined plate to remove excess oil, then transfer to serving bowl/plate.
-Top with your fav toppings like whip cream, chocolate sauce, sprinkles, cherries, or nuts and enjoy!!
💡Tip: this dessert should be enjoyed immediately. So I like to set up everything (toppings, plates, spoons) before starting to fry. That way they can be topped and enjoyed right away (while the cereal is warm and crunchy and before the ice cream really starts to melt through the coating).
