Protein-packed thin & crispy, healthy 5 seed crackers. They're keto, low-carb, vegan & gluten-free; with no flour or oils, just seeds, are so fast & easy to make.
This is another one of those things that I kept buying, even though they’re just SOOOOO easy to make. But once you make them, you’ll be hooked, because they’re easy & quick & so customizable. Try our sweetened version too!!

BASIC RECIPE:
1/4c pumpkin seeds
1/4c sunflower seeds
1/4c chia seeds
1/4c flax seeds
1/4c hemp seeds
3/4c cold water
1/2 tsp sea salt
-Combine all the ingredients into a mixing bowl
-Let sit for 10-15 minutes (it will thicken) from the flax & chia hydrating.
-Divide onto 2 parchment lined baking sheets, and press down with a spatula or between parchment sheets until nice and thin
TIP: The thinner you make them (as thin as you can go - the thickness of your pumpkin seeds) the crisper it will be after baking. Or if you leave it a bit thicker the crackers will have more chew, and hold together better for dipping.
-Bake 300F for 15 minutes, then carefully flip, score crackers if you’d like to have nice cut crackers (or you can skip this and simply break them up later), then bake another 15 minutes.
-Or air fryer at 300F for 15 minutes (you can score & flip halfway through but I usually don’t)
-Let cool.
-Break apart, and store in airtight container.
-Enjoy!!
Since everyone’s ovens/air fryers cook differently, if you find your crackers are still soft after cooling, you can pop them back in and bake them a little longer to dry them out more (or if you find they’ve softened after storing them too). These are the times/temps that worked for us.

SAVOURY VERSION: the basic recipe above, but with more flavour! Choose your favourite spice combos like garlic rosemary (or add a little of each!!).
1/4c pumpkin seeds
1/4c sunflower seeds
1/4c chia seeds

1/2 tsp sea salt
1 tsp dried herbs of choice (oregano, rosemary, thyme, etc)
1/2 tsp ground cumin
1/2 tsp onion powder
1/2 tsp garlic powder
Black pepper, to taste
Combine & follow same instructions

SWEET VERSION (feel free to double the batch too, but I like to make this in smaller amounts): here we swapped some water for maple syrup and added cocao nibs and cocao powder.
1tbsp pumpkin seeds
1tbsp sunflower seeds
1tbsp chia seeds
1tbsp flax seeds
1tbsp hemp seeds
2tbsp cold water
1tbsp maple syrup/honey/liquid sweetener of choice (we used organic maple syrup)
pinch sea salt
1/2tbsp cocao nibs
1tsp cocao powder
Combine & follow same instructions, but watch this one closely near the end. I haven’t had it burn yet, but with the added sugars from the syrup, it could burn easier than the rest.
