Chocolate Avocado Breakfast Pudding


Creamy, chocolatey pudding, made easy with only 3 ingredients. Add some optional toppings for crunch, and you’re all set for a sweet-tooth-satisfying breakfast, full of healthy fats to keep you full until lunch.


I love to make a bunch of these and freeze them for easy on-the-go breakfasts, when I don't have time to make something (Farmer's Market mornings!!). It's also great for when all your avocados and bananas go ripe at the same time, and you don't know what to do with them all.


Ingredients:

  • 1 ripe banana

  • 1/2 ripe avodaco

  • 1 tbsp raw cacao powder

Directions:

  1. Blend all the ingredients in a food processor until smooth. (Feel free to get creative and add some superfoods or spices - sometimes I like to add protein/collagen powder, maca, mushroom powder, vanilla or warming winter spices like blood-sugar-balancing cinnamon or nutmeg. I make them different every time, depending on what I have on hand.) You can also add a date or a splash of maple syrup if your banana isn't super duper ripe, or you just want a bit more sweetness.

  2. Add some water (or nut/coconut mylk) as you go, to help it blend smooth.

  3. Transfer to a bowl. (Time to get creative again and add some optional toppings: chopped nuts, hemp seeds, cocao nibs - the possibilities are endless! The one in the photo has chopped macadamia nuts & hemp seeds).

  4. Enjoy (or refrigerate/freeze to enjoy later!)
