Today we're making a Super Easy, Super Quick, 4-Ingredient No Bake Snack/Healthy Dessert Recipe:Peanut Butter Chocolate Oat Cups.

Oat Cups/Base:
-1c old fashioned rolled oats
-3 tbsp peanut butter or other nut/seed butter
-2 tbsp maple syrup
Filling:
-1/2c peanut butter or other nut/seed butter
-1/2c dark chocolate (df/v, or sugar-free chocolate if desired)
Optional Extras:
-Flakey sea salt, sprinkle as topping
-Chopped nuts of choice, sprinkle as topping
Combine base ingredients, then scoop by tablespoons into mini muffin cups (with papers if it isn’t a silicon mold, otherwise you’ll have trouble getting them out later). Makes 16-17 when done this way.
Then use the back of a tablespoon, sprayed with cooking spray to press the bases down and create an indentation in the middle. You can also use your fingers, but it works best if you have a little bowl of water nearby to rewet your fingers every now and then to prevent sticking.
Combine filling ingredients & melt in microwave in 30sec bursts, then divide into oat cups, about 1 tbsp each
Tap the tray on your counter or use a spoon to spread the filling out
Top with flakey sea salt or chopped nuts/seed if desired, then pop in the fridge or freezer until chocolate layer sets
Carefully pop them out of your silicon mini muffin pan, or peel off the paper liners, and enjoy! Store in airtight container in the fridge.
