2-Ingredient DF/V Sweetened Condensed Milk & Bonus 2-Ingredient Fudge Recipe

Do you ever find a recipe you want to make but it calls for sweetened condensed milk? Now you can make your own dairy-free/vegan version, and choose whichever sugar/sweetener you like!! It's a super easy 2-ingredient recipe (and saves you buying that $12 can of vegan condensed milk from the store).

Ingredients:

-1 can (1 3/4c) full fat coconut/df milk

-2/3c choice of sugar


Steps:

1. Combine & stir to dissolve sugar.

2. Heat & let simmer for 20-40 minutes until thicker (timing depends on sweetener & brand of coconut milk you use). Youā€™re looking for a change in colour - it will darken, and thicken (will coat back of a spoon). And should reduce to about 1 cup.

3. Then remove from heat, let cool, then seal, and store in fridge for up to a week, or freeze if storing longer.


Sugar-options we tried:

1. Organic cane sugar: took 20min to reduce to 1 cup

2. Organic coconut sugar: took 20min cook time to reduce to 1 cup

3. Organic pure maple syrup: took 25min to reduce to 1 cup (takes longer to reduce because it has more moisture)

Colour Results:

Cane sugar version was the lightest, followed by the maple syrup version. And

coconut sugar version was the darkest. So you may want to choose your sweetener based on the recipe you will be making with it.
