1-Ingredient Red Lentil Wraps (if you don't count water!)

While visiting my friend last week, she really wanted to make some wraps to go with our dinner. She happened to have red lentils on hand, so this is what we made:


Ingredients:

  • 1 cup red lentils, rinsed

  • 2 cups water


Directions:

  1. Combine lentisl & water, and let sit 2-3hours

  2. Puree in blender until smooth

  3. Cook in oiled pan about 1/3cup to 1/2cup at a time, swirling your pan to get the batter thin (or you can spread it around with a spatula)

  4. We found we needed to cook these longer than you would think (wait until they get some golden colour) and they come off the pan crunchy. But after sitting they soften back up, allowing you to fold them and use them as a wrap.

  5. Store leftovers covered in the fridge and gently reheat before eating (we used the microwave for 30-60 seconds).

  6. Enjoy!
